That is &#8211; it&#8217;s my favorite, but I didn&#8217;t create this recipe. It was given to me years ago by a co-worker, who got it from a friend in Alaska, who&#8230;well&#8230;you get the picture.<\/p>\n<p>It&#8217;s filled with goodies, giving it a delightful texture, and is very simple to make. It won best of class at the state Grange baking competition a few years ago, even though I <em>(GASP<\/em>) substituted a buttercream icing for the traditional cream cheese version. It works equally well as a layer cake, a sheet cake, or cupcakes. You just can&#8217;t fail if you follow this recipe!<\/p>\n<div class=\"easyrecipe\">\t<link itemprop=\"image\" href=\"http:\/\/www.therowdybaker.com\/wp-content\/uploads\/2013\/03\/carrot-cake-for-blog-300x233.jpg\" \/> <span class=\"item ERName\">Carrot Cake <\/span><\/p>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">The Rowdy Baker<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">2 cups plus 1 T all-purpose flour<\/li>\n<li class=\"ingredient\">2 cups sugar<\/li>\n<li class=\"ingredient\">2 teaspoons baking powder<\/li>\n<li class=\"ingredient\">1 teaspoon baking soda<\/li>\n<li class=\"ingredient\">2 teaspoons cinnamon<\/li>\n<li class=\"ingredient\">1 teaspoon salt<\/li>\n<li class=\"ingredient\">1 1\/4 cups oil<\/li>\n<li class=\"ingredient\">4 eggs<\/li>\n<li class=\"ingredient\">2 teaspoons vanilla<\/li>\n<li class=\"ingredient\">2 cups grated carrot<\/li>\n<li class=\"ingredient\">1 cup crushed pineapple, drained well<\/li>\n<li class=\"ingredient\">1\/2 cup raisins<\/li>\n<li class=\"ingredient\">1 cup nuts, chopped (walnuts or pecans)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Heat oven to 325 F.<\/li>\n<li class=\"instruction\">In a large bowl, mix dry ingredients together well.<\/li>\n<li class=\"instruction\">Add the oil and beat for 2 minutes.<\/li>\n<li class=\"instruction\">Add the eggs and vanilla, beat for 2 minutes.<\/li>\n<li class=\"instruction\">Stir in carrots, pineapple, raisins and nuts.<\/li>\n<li class=\"instruction\">Pour into a greased and floured 13&#215;9&#8243; pan. (Or you may use two 9&#8243; cake pans.)<\/li>\n<li class=\"instruction\">Bake for approximately one hour, (shorter for two 9&#8243; pans) or until a toothpick inserted in the center of the cake comes out clean.<\/li>\n<li class=\"instruction\">Cool well before icing.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.1.09<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<p><strong>Cream Cheese Frosting:<\/strong><\/p>\n<p>6 oz. cream cheese<br \/>\n3 tablespoons milk or cream<br \/>\n1 teaspoon vanilla<br \/>\n1\/2 teaspoon salt<br \/>\n1 pound powdered sugar<br \/>\n1\/2 cup coconut (optional)<br \/>\n3\/4 cup chopped pecans (optional)<\/p>\n<p>Combine cream cheese, milk and vanilla. Beat for 2-3 minutes. Add salt and powdered sugar. Beat well. Stir in coconut and chopped pecans. Spread on cooled cake.
