It would make a better story to say I sprained it when running from a bear, but I&#8217;m afraid I just wasn&#8217;t watching my step. Any bears in the vicinity, however, learned a few new words.<\/p>\n<p>So, in honor of my adventure I&#8217;m stealing a recipe from an old column I wrote and giving it to you with the only photo I have. These luscious muffins are simple to make; I&#8217;m sure you don&#8217;t need photos of me stirring the batter.\u00a0 Once I&#8217;m up and running again I&#8217;ll make it up to you, I promise.<\/p>\n<p>Huckleberries inspire me. They&#8217;re plump and juicy, and absolutely full of flavor. I add them to my angel food cakes, sprinkle them on pancake batter, toss them in banana breads, and even use them to make a mean margarita. They won a blue ribbon at our county fair, so I&#8217;m especially fond of them. Disclaimer: I don&#8217;t believe in sweet muffins (except for the topping, of course.) If I did, I would call them &#8220;<em>cupcakes<\/em>&#8220;!\u00a0If you&#8217;re addicted to Costco-type muffins, you might want to try a different recipe, or add more sugar.<\/p>\n<div class=\"easyrecipe\"> \t<link itemprop=\"image\" href=\"http:\/\/www.therowdybaker.com\/wp-content\/uploads\/2013\/07\/triple-berry-muffins2-300x234.jpg\" \/>\n<div class=\"item ERName\">Wild Mountain Huckleberry Muffins<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">The Rowdy Baker<\/span><\/div>\n<div class=\"ERSummary summary\">Makes 12 scrumptious muffins!<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 3\/4 cups all-purpose flour<\/li>\n<li class=\"ingredient\">1\/3 cup sugar<\/li>\n<li class=\"ingredient\">2 1\/2 teaspoon baking powder<\/li>\n<li class=\"ingredient\">3\/4 teaspoon salt<\/li>\n<li class=\"ingredient\">1 teaspoon grated lemon peel<\/li>\n<li class=\"ingredient\">3\/4 cup small mountain huckleberries, fresh or frozen, divided. (Do not thaw frozen berries)<\/li>\n<li class=\"ingredient\">1 well-beaten egg<\/li>\n<li class=\"ingredient\">3\/4 cup milk<\/li>\n<li class=\"ingredient\">1\/3 cup oil (I use peanut oil)<\/li>\n<li class=\"ingredient\">1\/2 teaspoon vanilla<\/li>\n<li class=\"ingredient\">2 tablespoons flour (if using frozen berries)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Heat oven to 375 F.<\/li>\n<li class=\"instruction\">Mix together all ingredients for streusel topping (see below) and set aside.<\/li>\n<li class=\"instruction\">In a large bowl, combine flour, sugar, baking powder, salt. Sift twice.<\/li>\n<li class=\"instruction\">Add lemon and 1\/2 cup berries, and toss. If you are using frozen berries, toss them with 2 tablespoons of flour in a small bowl and then add to the dry ingredients. Make a well.<\/li>\n<li class=\"instruction\">In a medium bowl, combine the egg, milk, oil, and vanilla and mix well. Add all at once to the dry ingredients, folding gently just until the dry ingredients are moistened.<\/li>\n<li class=\"instruction\">Divide between 12 lined muffin cups. Press remaining berries gently onto tops of muffins and cover with streusel mixture.<\/li>\n<li class=\"instruction\">Bake for 20-25 minutes, or until a toothpick inserted in the middle of a muffin comes out clean. Cool on a rack.<\/li>\n<li class=\"instruction\">When cool, drizzle with icing (see below) if desired.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.2.1255<\/div>\n<\/div>\n<p><strong>\u00a0Streusel Topping:<\/strong><br \/>\n1\/2 cup all-purpose flour<br \/>\n1\/2 cup chopped pecans (or walnuts)<br \/>\n1\/2 cup brown sugar<br \/>\n4 tablespoons (1\/4 cup) butter, melted<br \/>\n1\/2 teaspoon cinnamon<\/p>\n<p><strong>ICING: <\/strong><br \/>\n3\/4 cup powdered sugar<br \/>\n1 tablespoon lemon juice<br \/>\n1\/2 teaspoon vanilla. Water if needed to thin.<\/p>\n<p>Mix together well.<\/p>\n<p>Be assured that even though I can&#8217;t be up and baking right now, my mind isn&#8217;t idle.
