They&#8217;re a little fragile after they&#8217;ve been baked, so if your littles are . . . well . . . <em>little<\/em>, you may want to supervise the filling and egg placement. To make the process even easier, you can always use canned frosting instead of making ganache.<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\"> \t<link itemprop=\"image\" href=\"http:\/\/www.therowdybaker.com\/wp-content\/uploads\/2019\/04\/Chocolate-Shortbread-Bird-Nests-The-Rowdy-Baker-1024x678.jpg\" \/>\n<div class=\"item ERName\">Chocolate Shortbread Bird Nests<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">The Rowdy Baker<\/span><\/div>\n<div class=\"ERSummary summary\">Makes about 4 dozen<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">\u00bd cup butter, softened<\/li>\n<li class=\"ingredient\">\u00bd cup shortening<\/li>\n<li class=\"ingredient\">1 cup powdered sugar<\/li>\n<li class=\"ingredient\">1 egg yolk<\/li>\n<li class=\"ingredient\">3 tablespoons coffee or milk<\/li>\n<li class=\"ingredient\">2 cups all-purpose flour<\/li>\n<li class=\"ingredient\">\u2153 cup unsweetened cocoa powder<\/li>\n<li class=\"ingredient\">\u00bc teaspoon salt<\/li>\n<li class=\"ingredient\">\u00bd cup cornstarch<\/li>\n<li class=\"ingredient\">GANACHE:<\/li>\n<li class=\"ingredient\">1\/2 cup heavy cream<\/li>\n<li class=\"ingredient\">6 ounces dark chocolate, chopped (I used mini-chips)<\/li>\n<li class=\"ingredient\">Small candy eggs<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">In a large bowl (a stand mixture is recommended) beat the butter, shortening, and powdered sugar together until creamy.<\/li>\n<li class=\"instruction\">Add egg yolk and coffee (or milk) and mix well.<\/li>\n<li class=\"instruction\">Add flour, cocoa powder, salt, and cornstarch. Beat well. Be patient &#8211; it may take a few minutes before the mixture comes together.<\/li>\n<li class=\"instruction\">Divide into two parts and chill for 1 hour.<\/li>\n<li class=\"instruction\">Heat oven to 350 F.<\/li>\n<li class=\"instruction\">Lightly spray mini cupcake pan with baking spray (an oil\/flour mixture).<\/li>\n<li class=\"instruction\">On floured surface roll half of the dough out approximately 1\/8-inch thick. To keep the cookies similar in size, cut out 3-inch rounds (or squares). Using a thin spatula or bench scraper, chop one piece into thin strips. Lift the strips into a cavity of prepared pan, loosely surrounding the sides. Leave a few stray pieces sticking out of the top. Place a scrap of dough into the bottom of the cup if needed and press gently. Repeat with all of the remaining dough.<\/li>\n<li class=\"instruction\">Bake approximately 8-9 minutes. Allow cookies to cool for several minutes, then gently lift each out of the pan and place on a cooling rack. Once cooled the cookies should be fairly crisp. If not, add another minute to the remaining cookies.<\/li>\n<li class=\"instruction\">GANACHE: Heat heavy cream until it&#8217;s steamy. Remove from heat, add chocolate and let it sit for 3-4 minutes. Bake!<\/p><\/div>\n<p>Hint: Once they&#8217;ve cooled a bit, try putting something lightweight but stiff (cardboard, a flexible cutting board, etc.) over the top and then flipping the whole works over.
